The project response was to co-create and pilot, with the current cohort of year 2 culinary arts students, a new module ‘ The Mindful Kitchen: Creativity and Social Gastronomy’. *Jennifer Burke Award for Innovation in Teaching and Learning 2019 The vision of social gastronomy is that of active learning: “the relationship between the kitchen and people, a way of serving others that respects the environment and reflects the culture as well as an opportunity to live in a future that is zero hunger and zero waste” (World Economic Forum 2018).Within culinary education despite food being a tool for change, there is very limited focus on community- engaged learning and ways for students to explore how they can use their skills and knowledge in active citizenship. Social Gastronomy is now regarded as the new hospitality, one which students need to embrace as a future career option. Following their experience in the module last year, the student cohort expressed a wish to continue ‘ The Mindful Kitchen’ approach into year 2 of their course for 2020/21.Īlongside this, social gastronomy has been very much part of the global response by chefs during COVID-19. In general, there is very little time given in culinary programmes to make students aware of how they can develop their creativity skills. Though creativity is part of culinary arts, creativity is also a skill which we can teach to produce innovative professional culinarians. ‘ The Mindful Kitchen: Health and well-being for chefs’ is a unique award-winning module*, delivered in all year 1 culinary programmes in the Tallaght campus, while it also resides in the ‘ The Mindful Kitchen Project’ set of activities.Īlthough some students are acutely aware of their creative ability, student feedback highlighted that the mindful approach increased this awareness in all.
